it&#8217;s zucchini season so you know this is the star of this dessert!\u00a0You\u2019ll need one medium zucchini (about 1 1\/2 cups) and this not only adds nutritional benefits, but it also makes these healthy brownies nice and moist, no need to squeeze the water out.<\/li>\n<li><strong>whole wheat pastry flour<\/strong> &#8211; I love baking with <a href=\"https:\/\/urlgeni.us\/amzn\/WgjZf\" target=\"_blank\" rel=\"noreferrer noopener\">whole wheat pastry flour<\/a> as it has all the nutritional benefits of whole grain flour while giving these brownies light and fluffy texture.\u00a0I highly recommend using <a href=\"https:\/\/urlgeni.us\/amzn\/WgjZf\" target=\"_blank\" rel=\"noreferrer noopener\">this<\/a>, but if you don\u2019t have any on hand you could use white whole wheat flour, regular all-purpose flour or even <a href=\"https:\/\/urlgeni.us\/amzn\/fKvOV\">gluten-free baking flour<\/a>.<\/li>\n<li><strong>cocoa powder<\/strong> &#8211; gives these brownies their chocolatey flavor!\u00a0Just make sure to use <a href=\"https:\/\/urlgeni.us\/amzn\/wAOv2\">unsweetened natural cocoa powder<\/a> or cacao powder. A little bit of espresso powder would be a huge hit too!<\/li>\n<li><strong>baking powder<\/strong> &#8211; acts as a leavening agent to help these brownies rise, you can also use baking soda.<\/li>\n<li><strong>eggs<\/strong> &#8211; adds protein and gives these brownies their structure and height.<\/li>\n<li><strong>coconut oil<\/strong> &#8211; for additional moisture and richness, just make sure to measure it solid before melting.\u00a0Feel free to sub with vegetable oil, canola oil or even butter, if you prefer.<\/li>\n<li><strong>honey<\/strong> &#8211; naturally sweetens these brownies without using any refined sugar.\u00a0You could also use pure maple syrup or agave.\u00a0I don&#8217;t recommend using granulated sugar in this recipe as it could make the brownies too dry.<\/li>\n<li><strong>vanilla extract + salt<\/strong> &#8211; boosts of flavor!<\/li>\n<li><strong>chocolate chips<\/strong> &#8211; I used <a href=\"https:\/\/urlgeni.us\/amzn\/G7fqZ\" target=\"_blank\" rel=\"noreferrer noopener\">Lily\u2019s semi-sweet chocolate chips<\/a> to make these brownies even fudgier!\u00a0They are gluten-free, vegan and sweetened with stevia making the sugar content really low while still having that delicious chocolate flavor.\u00a0<\/li>\n<\/ul>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" width=\"1200\" height=\"1799\" src=\"http:\/\/anitaexpert.com\/wp-content\/uploads\/2025\/09\/zucchini-brownies-3.jpg\" alt=\"These Fudgy Zucchini Brownies are deliciously moist with a rich chocolate taste loaded with shredded zucchini and made healthier with zero butter or refined sugar!\u00a0 One of our family&#039;s favorite summer desserts!\" class=\"wp-image-31334\" \/><\/figure>\n<h2 class=\"wp-block-heading\">How to Make Fudgy Zucchini Brownies<\/h2>\n<ol class=\"wp-block-list\">\n<li><strong>Prep the zucchini. <\/strong>Using a\u00a0<a href=\"https:\/\/urlgeni.us\/amzn\/CAIeE\" target=\"_blank\" rel=\"noreferrer noopener\">box grater<\/a>, shred one medium zucchini (you&#8217;ll need about 1 1\/2 cups zucchini shreds).\u00a0Don&#8217;t squeeze out the water with a paper towel as we want all that moisture for our brownies!<\/li>\n<li><strong>Mix ingredients.<\/strong>\u00a0In a medium mixing bowl, stir together the flour, cocoa powder, baking powder, and salt, then set aside. In a large mixing bowl, whisk together the eggs and honey really good for about a minute (this helps us not have flat brownies) then mix in the coconut oil and vanilla extract.<\/li>\n<li><strong>Make the batter.<\/strong>\u00a0Pour the dry ingredients in with the wet ingredients and mix with a rubber spatula until just combined, being careful not to over-mix the batter, and then mix in the shredded zucchini. This brownie batter will seem thick at first, but will become the perfect consistency after adding the zucchini!\u00a0Fold in the chocolate chips and pour mixture into a <a href=\"https:\/\/urlgeni.us\/amzn\/3U4fR\">9&#215;9 baking pan<\/a> lined with parchment paper or sprayed generously with nonstick spray.<\/li>\n<li><strong>BAKE!<\/strong>\u00a0Bake the brownies in the oven at 350 degrees F for 30 to 32 mins, or until a toothpick inserted comes out clean.\u00a0Let the brownies cool completely on a wire rack then cut them into squares and enjoy!<\/li>\n<\/ol>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" width=\"1200\" height=\"1799\" src=\"http:\/\/anitaexpert.com\/wp-content\/uploads\/2025\/09\/zucchini-brownies-6-1.jpg\" alt=\"These Fudgy Zucchini Brownies are deliciously moist with a rich chocolate taste loaded with shredded zucchini and made healthier with zero butter or refined sugar!\u00a0 One of our family&#039;s favorite summer desserts!\" class=\"wp-image-31337\" \/><\/figure>\n<h2 class=\"wp-block-heading\">Tips, Tricks and Substitutions<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Don&#8217;t squeeze water out of zucchini!\u00a0<\/strong> We need the the water from the zucchini for all that great moisture.<\/li>\n<li><strong>Batter will be thick at first.<\/strong>\u00a0That&#8217;s okay though!\u00a0 Adding the shredded zucchini gives these brownies the moisture they need and you&#8217;ll find once adding it in the batter comes together nicely.<\/li>\n<li><strong>Mix the eggs and honey together really well.\u00a0<\/strong> This is something I tested and it worked really well!\u00a0 Whisking the eggs and honey together before adding in the rest of the ingredients really helps give these brownies a softer texture and some height.\u00a0This isn&#8217;t necessary, just really worth the extra step.<\/li>\n<li><strong>Don&#8217;t use granulated sugars.<\/strong>\u00a0 I used honey in these brownies as a natural sweetener (or you could use maple syrup), but using granulated sugars could make the brownies too dry.\u00a0I have not tested this yet, but I would not recommend.<\/li>\n<li><strong>Let the brownies cool completely.\u00a0<\/strong>I know it&#8217;s so hard to wait, but these brownies need time to set after you take them out of the oven.\u00a0If you cut right into these brownies while they&#8217;re hot they will probably fall apart.\u00a0We want that moisture to set up making them ooey, gooey and so delicious!<\/li>\n<li><strong>Additional mix-ins.&nbsp;
